Sensorialist is the result of a collaboration process between the Politecnico di Milano, the Sensomines Ecole des Mines de Saint Etienne and the Ecole des Mines d'Ales research teams and the applied mathematics laboratories of the Agrocampus Ouest in Rennes. Linked to the OSEM program of the French Ministry for Industry, the project investigates the sensory properties of materials using engineering methodology to extract information that can be applied to the industrial sector. The bottom line of the thesis is this: is there a system for understanding how the user perceives the surface of a product, and with which criteria can this affect the preference for one object over another? The search for the answer was based on a tool designed for quantification and classification of sensory preferences, able to objectively define the sensation experienced, isolate it as technical detail and make it applicable to the design of new types of textures. A new tool was developed to achieve this goal, derived from sensory analysis and referred to as Sensory Metrology. The system is based on a series of comparison tests on textured samples, specially studied to obtain comparable statistical results. A series of tests defined the "panel" of 20 users to be used for the test.
