EN.FA.SI. is a Systemic Design project focused on the recovery and re-using of products derived from the Fagiolo Cuneo IGP production chain. The improvements introduced cover a range of areas such as water consumption, the use of pesticides, and field waste management. During the project the recovery of biomass for the production of 100% recycled paper was tested with the Favini company, and the possibility of producing food supplements, cosmetics, biopolymers and biofilms from the bean pod was examined. The resulting food product is a bean that has been pre-cooked in an autoclave and subjected to two processes in order to increase conservation without the use of preservatives or liquids. One process involves the drying of the product; the second is a lamination process which eliminates the liquid and transforms the beans into flakes.
